Chana Curry
1 can chick peas (drained & rinsed)
1 chopped onion
2 chopped tomatoes
1/2 bunch fresh coriander leaves
2 tablespoons chana masala
1 teaspoon salt
1/2 teaspoon baking soda
1 cup water
 
Method:
 In a pan, fry onions till golden.
 Add the tomatoes and stir.
 Add chana masala, salt, chick peas
 Stir for 5minutes, then add the
baking soda, water and bring to a boil.
 Add coriander and simmer for 10
minutes.
Chana masala:  coriander, salt, dry mango, pomegranate seeds, chili, cumin,
musk melon, black pepper, black salt, fenugreek leaves, cloves, mint, nutmeg,
dry ginger, cinnamon, bay leaf, cardamom, ammonum seeds, caraway, mace.
Chicken Curry
1 lb chicken (8 pieces)
1 chopped onion
2 chopped tomatoes
1 bunch fresh coriander leaves
2 tablespoons chicken masala
1/2 teaspoon salt
1/2 teaspoon ginger
2 cloves garlic
Optional : 1 cup yogurt or coconut
milk
Method:
 In a pan, fry ginger, garlic & onions
till golden.
 Add the tomatoes and stir.
 Add chicken and cook for 5
minutes
 Add chicken masala,  coriander
 (Add yogurt or coconut milk)
 Simmer for 20 minutes.
Chicken masala:  coriander, chilies, cumin, turmeric, fenugreek leaves, salt,
black pepper, dry ginger, mustard, bay leaf, pulse, cloves, nutmeg, caraway,
cinnamon, cardamom seeds, mace, asafetida.
Garam Masala Roasted Chicken
1 whole chicken or 4 to 6 thighs & legs
2 tablespoon vegetable oil
3 tablespoons Garam Masala
Salt to taste Method
Mix the garam masala, vegetable oil
and salt together
Spread the mixture on the chicken
Roast the chicken in the oven at 350º
and cook till chicken is white on the
inside. ½ hour to 1 hour
Or  you can barbecue
Serve with your favorite (tamarind,
date & chili) sauce
Garam Masala:  Cumin, black pepper, coriander, cardamom seeds, cloves,
nutmeg, cinnamon, dry ginger, bay leaf, caraway, mace.
Fish or Shrimp Curry
4-6 pieces of fish.
1 can of coconut milk
1 cup of water
2 tablespoons Fish Curry Masala
Salt
1 onion
2 teaspoons vinegar or white wine
½ bunch fresh coriander
 Can add cubed mango, plus the pit
for a sweet sour taste
Sprinkle salt on fish and set aside
In a frying pan, golden onions
Add fish curry masala, coconut milk,
vinegar, salt or wine
Simmer till sauce reduces in ½, add
fish
Once the fish is cooked add fresh
coriander
Fried fish or shrimp
Paste: mix oil, fish masala, salt
Mix fish pieces with the paste
Cover fish with flour and cook in
frying pan
Fish Curry Masala:  coriander, chili, turmeric, cumin, fenugreek leaves, salt,
black pepper, Bishop’s weed, dry mango, dry ginger, mustard, pulse, cloves,
nutmeg, cinnamon, caraway, cardamom seeds, mace, asafetida
Bhel Puri
Add these to the mixture.  It is really
tasty and spicy. Great as an appetizer
or salad.
2 small boiled potatoes chopped or a
can of chick peas
½ bunch chopped coriander leaves
½ onion chopped
 Mix all ingredients just before you
are ready to serve.
Dal Curry
1½ cup masoor dal (red lentils)
2 green chilies
3 onions, minced
1 large tomato, minced
½ teaspoon mustard seeds
a few kadi patta (curry leaves)
2 tablespoon oil
½ teaspoon ginger,  minced
½ teaspoon garlic, minced
1 tablespoon vinegar
3 tablespoons Dal Masala
½ bunch of coriander leaves finely
chopped
Method
Boil Dal and keep aside
Heat oil in a pot and fry mustard
seeds
Add onions and kadi patta
When onions turn brown, add the Dal
Masala, ginger/garlic, vinegar and
cook for 5 minutes
Add tomatoes and cook for 5 minutes.
Add the boiled Dal and cook for 10
minutes
Garnish with coriander leaves
Dal Masala:  tablespoon coriander powder, tablespoon cumin powder,
tablespoon turmeric powder, tablespoon garam masala powder, tablespoon
chili powder
